Matthew XV: 18-20

But the things that proceed from out of the mouth, come from the heart and those that defile a person. 

For from the heart come forth evil thoughts, murders, adulteries, fornication, thefts, false testimonies, and blasphemies.

These are the things that defile a person. But to eat with unwashed hands does not defile a person.
